ANTI-DESPOTTO RISOTTO

Risotto is actually super easy to make, the only catch is that you have to constantly watch it and stir it. Apart from that, there's not a lot of ingredients and little preparation.


Suitable for vegans.


You need:

Olive oil
1 onion, finely chopped
1 clove of garlic, minced
1 red pepper, finely chopped
250 grams of mushrooms, sliced
300 grams of arboria rice
Vegan margarine
Vegetable stock
Mixed herbs
White wine
Sweet potato (optional)
Chopped parsley (optional)

Heat olive oil in a medium heated pan.

Add chopped onions, garlic, red peppers and mushrooms. When you cook the mushrooms, make sure they are evenly spread on the pan, as if they are on top of each other, they will steam as opposed to saute. Cook for 2-3 minutes.

Add arboria rice and fry for a a minute. Add a glass of wine and cook this off until no wine can be seen. Drink a glass of wine. Add water with veg stock so everything begins to boil but don't drown it in water.

After that just add a ladle of stock every now and then when it begins to dry up and stir like fuck. Don't let it settle.

Do this for around 30 mins until the rice tastes cooked. When its right consistency and you're happy with it, take it off the hob and add mixed herbs and few chunks of vegan margarine and stir it through.

Leave it for 5 minutes or so and BINGO.

If you wanna go all out boil sweet potato separately, mash it and stir it in with the margarine.

Garnish with chopped parsley, serve with a few glasses of wine.
